I thought it was made by Manta Cars, therefore that it is a Manta Coyote?

It is a replica of the Cody Coyote from the Hardcastle & McCormick TV series. It is based upon a Manta Montage and has a 3.3-litre GM V6 engine. The Manta Montage itself is a replica of the McLaren M6 GT.
