Might just be me, but it strongly reminds me of raw salmon marinated in lime juice. Which is one of my favourite varieties of the salmon possibilities... Another brilliant one is smoked salmon with fresh honey and honeycomb, avocado and caper salad.

I love raw tuna fish, japanese way. And raw mackerel. Mackerel is cheap, but the tastiest of them all. It can also be used to swear.

A really good alternative to the long process of smoking Salmon is to prepare it on wood Cedar planks over open charcoal.  The best!  Probably though getting the Salmon and the planks might be difficult.  When the Salmon "run" here in California it's quite the sight.  They swim in from the ocean, up the delta, through the different tributaries, ultimately some reach as high as Lake Tahoe to breed.   We had property that a finger tributary from the Yuba river would be fill with Salmon.  We sometimes could chase one into a shallow depression off the bank and never had to use a fishing line.  A fresh Salmon, open fire on the banks of the river with four friends and a case of beer.....good times.

Though Salmon is one of my favs, sashimi style tuna belly has to top it by far.

Couldn't find any honeycomb in time, but the rest was what I had for lunch today. Delicious!

Smoked Salmon is one of my favorite smoked fish.   Smoked Chubs are really good too.

Smoked Eel, or 'Paling' in dutch, is probably the absolute best smoked fish I know.

Ik mis de Nederlandse vis zo veel! Ik heb haring hier in Australie ge-probeert, en het was AFSCHUWLIJK! Kan niet eens paling vinden hier, laat staan van de zelfde kwaliteit als in Nederland verkrijgbaar is.
